Bran Cake

From ros on the forum:

8oz bran either straight bran, Allbran, bran flake cereal or similar
6oz sugar (I use light brown)
1/2 pint milk
1/2 pint water
8 oz dried fruit….whatever the kids prefer, tend just to use sultanas but pineapple and apricots make a nice variation

Mix the above together and stand for half an hour or so ( or leave in the fiddge overnight/ until you have the oven on for something else) until the bran is soft and soggy. Stir in a lightly beaten egg and 8oz self-raising flour ( or plain with your preferred raising agent(s). Bake in a 2lb lined loaf tin for about 1 hr at 180C (do the skewer test to be sure)
