Bread Pudding

From diddlydoos on the forum:

6oz muesli (cheap stuff will do!)
4oz molasses sugar
6oz sultanas
2tbsp malt extract (Holland & Barrett etc)
8floz apple juice
1 big cooking apple (grapefruit size)
6oz wholemeal flour (Self Raising if poss)
2tbsp baking powder
1tbsp mixed spice

Put muesli, sugar, sultanas, malt and juice into a bowl together and sock for 30 mins. Add apple (grated), flour, baking powder and mix together. Put in a greased and papered tin.

Bake for an hour and a half at 150 degrees or until done.

(I use up all manner of dried fruit in this recipe, not just sultanas! Yummy with dried tropical fruits, but soak a bit longer otherwise the bananas are a bit crunchy!!)
