Carrot Cake With Cream Cheese Icing

250g flour
2tsp cinnamon
half tsp ginger
125g butter
125g clear honey
125g soft brown sugar
250g grated carrots
50g chopped walnuts
50g sultanas/cranberries
zest of 1 orange

Icing:
175g cream cheese
50g icing sugar
1-2 tbsp orange juice

Mix flour and spices in a large bowl.
Melt butter in a pan with sugar and honey. Mix into flour.
Add carrot, fruit, nuts and zest. Mix well.
Bake in a greased/lined cake tin @ 180 for 45 mins.
Leave to cool. Cream icing ingredients together. Spread over the cake.
