Farmhouse Fruit Cake

This is a very old recipe (hence the lbs and oz!) given to me by a friend. It is a chuck it all it the bowl job and very easy to do. It is also extremely delicious!

8oz sr flour
1tsp mixed spice
5oz brown sugar
5oz marg or butter
2 eggs
12oz mixed fruit
4 fl oz milk

Gas mark 2, 150C, for about 1.5 hours.

Grease and line an 8 in round cake tin.
Place all ingredients in a bowl. Beat well until mixed.
Place mixture in the tin, smooth the top and bung it in the oven.

Keep the oven low so that it stays moist and doesn't catch on top. If you aren't sure whether it's cooked or not stick a knife in the top and if it comes out clean it's ready.
