Here's a little recipe I love for Fifteens which I passed on to my sister and now she has her son pestering her every weekend to make them!
- 15 large marshmallows
- 15 digestive biscuits, crushed
- 15 glace cherries, halved
- 160 ml condensed milk
- 75 g dessicated coconut
Snip the marshmallows in half with scissors and add to a bowl along with the digestives and cherries. Add the condensed milk gradually and stir. You might now have to get your hands in there and mould the dough as it will start forming and is a bit tricky to deal with. If the dough seems too hard, then add a little more condensed milk.
Put the dessicated coconut on your work surface and roll the dough out until its in a long sausage, long enough for you to cut approximately 20 equal pieces from, and until the outside is nicely coated in the coconut. Then cover the sausage in cling film and refridgerate for about 2 hours.
When your 2 hours is up, remove the cling film and cut into 20 pieces, and serve. Very icky, very sticky but LOVELY!
They will keep in a tupperware tub for about 4 days.
As a variation, my sister uses dark chocolate digestives and leaves the cherries out and its just as nice.
