Gooey Vegan Choccy Cake

I wanted to treat my vegan partner to a cake for his birthday (what's a birthday without a cake?) and he is a bit of a chocolate monster. I though I'd share the recipe because it's one of the nicest choccy cakes I've ever had (I can only eat homemade cakes cos of my nut allergy)…

Recipe for a gooey vegan choccy cake:

1 1/2 cups plain flour
1/3 cup cocoa powder (fairtrade -obviously)
1 cup sugar
1 tsp baking soda
1/2 cup oil (vegetable or sunflower -it would taste weird with olive)
1/2 cup soya milk
1/2 cup orange juice
2 tsp vanilla essence
2 tblsp vinegar

I usually just measure and mix all the dry ingredients in a bowl, measure and mix all the wet ingredients in a jug except the vinegar.
Pour the wet into the dry slowly and stirring well. The vinegar should be added at the very last minute before your put the mixture in the cake tin and straight into the oven. 190 degrees for 25-30 mins

I would warn you to use greaseproof paper or grease the tin really well (with oil or a vegan spread such as 'pure') -this cake really is quite sticky!

Once the cake has cooled -cover with a thick layer of chocolate buttercream (about 50g vegan spread, 100g icing sugar, couple of drops of vanilla essence and cocoa powder to taste)
